Lola's Pop-Up
We’re excited to welcome Chef Suzanne Cupps of Lola’s in New York City to Birch for a one-night-only pop-up dinner. Suzanne is known for thoughtful, ingredient-driven cooking that draws on her Filipino-American background while remaining deeply rooted in seasonality and the relationships she builds with farmers and producers.
This dinner also continues a friendship between Suzanne and Chef Kyle. In March 2024, Kyle joined Suzanne at Lola’s for a pop-up dinner in New York, and now we’re excited to return the hospitality and bring the collaboration to Milwaukee. For one night, Suzanne and Kyle will cook together at Birch, creating a menu that reflects both chefs’ perspectives and their shared approach to ingredients, generosity, and hospitality.
Reservations are available from 5:00–9:00 p.m., and guests may book any available seating time throughout the evening. The experience is $110 per person, with beverages, tax, and gratuity additional.
a.kitchen Pop-Up
We’re excited to welcome restaurateur Ellen Yin and Chef Eli Collins of a.kitchen in Philadelphia to Birch for a one-night-only pop-up dinner. Ellen is one of the defining figures in Philadelphia’s restaurant community and the 2023 James Beard Award winner for Outstanding Restaurateur. Eli leads the kitchen at a.kitchen, where his seasonal, French-inspired cooking and focus on exceptional ingredients have made it one of Philadelphia’s standout restaurants.
There’s a lot about a.kitchen that feels familiar to us at Birch: thoughtful sourcing, ingredient-driven cooking, warm hospitality, and a wine program that is every bit as important as the food. For one night, Ellen and Eli will join Kyle and the Birch team for a collaborative dinner bringing those shared sensibilities together in Milwaukee.

Canter Inn Pop-Up
On Tuesday, October 27, we’re excited to welcome Chefs Jon Nodler and Sam Kincaid of Canter Inn in New Glarus, Wisconsin to Birch for a one-night-only pop-up dinner.
Jon and Sam returned to Wisconsin after years in Philadelphia, where they opened Cadence, named Food & Wine’s #1 Best New Restaurant in 2019. Their newest restaurant, Canter Inn, brings that experience home, celebrating the farms and ingredients of Green County alongside the Swiss traditions of New Glarus.
There’s a natural connection between Canter Inn and Birch: two Wisconsin restaurants driven by seasonality, relationships with local farmers, and cooking that starts with great ingredients. For one night, Jon, Sam, and Kyle will bring their kitchens together for a collaborative menu that celebrates what’s growing and being raised here in Wisconsin.
